I love to read, but one of my other hobbies is baking. I’m certainly no pro, but it’s really fun to whip up a (usually sweet) recipe. When bringing food for a school or family function, you can usually find me in the kitchen the night before, covered in flour.
The latest school function was no different. See, I created this blog as part of a school curriculum. For my senior year, I opted to take a Writing Exception Blogs (W.E.B.) course at my school. Today, we had a breakfast party in celebration of our first term as bloggers. An accomplishment like that deserves a sweet treat. I chose this Oatmeal Chocolate Chip Cake from Betty Crocker.
The best part of making this cake was my motivation behind it. My blogging class has worked incredibly hard these past months to create our brands and launch our blogs. We deserved a little break and some bonding over breakfast.
I made a few substitutions for the frosting in this recipe. I’m not a huge fan of German chocolate cakes, so I removed the pecans and coconut from the frosting. However, it turned out quite thick whiteout these ingredients. I ended up adding a splash more of whipping cream, and quite a bit of cocoa powder for flavor.
The good news: theres still some leftover cake for a nice reading snack!
